XXVII. FOOD EDUCATION: A KEY COMPONENT IN THE DEVELOPMENT OF SKILLS AND HEALTHY HABITS

Abstract
There is a reality that cannot be ignored and that should raise early alerts in the
management of problems related to so many foods that are consumed, as in their forms of
food, what would be called habits, and this reality draws attention to the fact that a poor diet
can lead to complications related to the integral well-being of minors, causing conditions
such as malnutrition, obesity, hypertension, diabetes... ; which make education, responding
to its integral vocation, become an ally to respond to this problem.
Its objective was to strengthen the habits, skills and knowledge of Food Education
students of an Educational Institution of Santander, through the implementation of a
transversal education program detecting possible changes through a pre- and postimplementation diagnosis. Information was collected, under the qualitative paradigm, and its
design Action Research, through different instruments around healthy diets, habits and food
education, a food education program based on play was designed and implemented as a
didactic tool that encourages participation and the implemented program was evaluated.
School feeding has aroused interest in the participants of the educational process, there
have been transformations in the behavior of schoolchildren, related to inclinations towards
unhealthy foods that have led to the rise of non-communicable diseases from an early age.
